A Halal kitchen where the fire is never rushed.
Tandoor, sigri, handi. Clay, charcoal, patience — the fire that raised us, still burning every night of the week.
Olive oil, warm bread, slow eggs, mezze. One day a week, the fire rests and the table turns Mediterranean.
Four fires.
One standard.
Nothing leaves this kitchen without meeting the fire that shapes it — each one lit every day since 1980, and each one here for a single reason: to give the plate its soul.
The Tandoor
Clay, 480°C, unbroken since morning. Breads blistered at the edge, tikkas smoked to the bone. The fire that has never once gone cold in forty-five years.
The Sigri
Charcoal, lit at three in the afternoon. The slow perfume that drifts to the street and tells the neighbourhood dinner is close. Seekh, chops, and the char we are known for.
The Handi
Sealed clay, four unhurried hours. Korma, nihari, gravies that carry the memory of every slow afternoon this kitchen has known. Time, never shortcuts.
The Pass
Marble, one chef, forty covers. Ninety seconds between pan and plate. The last fire of the room — precision, and the hands that plate every dish.
In numbers,
slowly.
